Ingredients

  • 800g bunched carrots, trimmed
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • zest of 1 orange, plus the juice of ½
  • 2 tsp wine vinegar
  • 75g walnut pieces
  • ½ x 30g pack parsley, chopped

Step by step

  1. Preheat the oven to 190°C, fan 170°C, gas 5. Toss the carrots in a roasting tin with the oil and some salt and pepper. Roast for 25 minutes.
  2. Drizzle the maple syrup, orange juice and vinegar over the carrots and toss to coat. Roast for another 5 minutes.
  3. Stir the zest through the carrots and put the walnuts into a separate roasting tin. Roast both for 5 minutes.
  4. Stir most of the walnuts and the parsley through the carrots, then transfer to a serving plate. Scatter over the remaining walnuts and parsley to serve.
