Fresh herb salad with cherries and almonds

Make the best of in-season cherries with this delicious sharing salad. Don’t be afraid to use lots of herbs, and to season with plenty of lemon juice and salt

Ingredients

  • 1 x 500g punnet cherries, pitted and halved
  • 90g coriander, leaves chopped
  • 90g flat-leaf parsley, leaves chopped
  • 4 spring onions, thinly sliced
  • 2 green chillies, thinly sliced
  • 150g blanched almonds, roughly chopped
  • 150ml extra-virgin olive oil
  • juice of 2 lemons
  • sea salt flakes, to taste

Step by step

  1. Put the cherries, fresh herbs, spring onions, chillies and almonds in a large mixing bowl. In a jug, whisk together the olive oil and lemon juice, then pour over the fresh ingredients. Toss everything together, then season to taste with sea salt.
  2. Transfer to a wide serving bowl or platter and serve immediately.
Cook's tip
No cherry pitter? Use a cocktail stick or a metal or glass straw to ease out the stones.
