Ingredients

  • 160g pack The Vegetarian Butcher, What the Cluck
  • 1 tbsp olive oil
  • 1/4-½ tsp Cajun spice (to taste)
  • 250g pack Sainsbury’s golden vegetable rice
  • 1 baby cucumber, sliced lengthways
  • 1 small avocado, peeled, stoned and sliced
  • 1 small carrot, peeled and cut into thin sticks
  • ¼ red pepper, deseeded and thinly sliced
For the winter coleslaw
  • ½ red onion, peeled and finely sliced
  • ¼ small red cabbage, cored, shredded
  • 2 tbsp vegan mayonnaise
  • ½ raw beetroot, peeled and grated
Rice wine dressing (optional)
  • 1 tbsp rice vinegar
  • 2 tbsp olive oil
  • Chopped red chilli (to taste)

Step by step

  1. First prepare the coleslaw, Mix all the ingredients together in a bowl. Cover with cling film and chill in the fridge.
  2. Put the What the Cluck pieces in a bowl with half the olive oil and the Cajun spice and toss well to coat. Heat the remaining oil in a frying pan, add the spiced pieces and cook, stirring moderately, for 5 mins.
  3. Meanwhile, cook the rice in the microwave according to pack instructions. Serve in bowls with the Cajun-spiced What the Cluck pieces, winter coleslaw and remaining ingredients. If serving with the dressing, mix all the dressing ingredients together and serve alongside.
