Ingredients

  • 1 tbsp plus 1 tsp sesame oil or vegetable oil
  • 1 x 350g pack chilled Quorn chicken-style pieces
  • 170g medium egg noodles
  • 5 spring onions (1 finely sliced, 4 roughly chopped)
  • 2 large plums, stoned and cut into wedges
  • 1 tsp brown sugar
  • 30g root ginger, finely shredded or chopped
  • 1 x 200g pack baby corn and mangetout, halved
  • 50g cashews
  • 4 tbsp sticky plum sauce
  • 1 tbsp light soy sauce

Step by step

To store
Cover any leftovers and store in the fridge, ready to be reheated the following day.
  1. Heat 1 tablespoon of oil in a wok or large non-stick frying pan on a fairly high heat. Add the Quorn pieces and stir-fry for about 5 minutes until well-browned. Meanwhile, cook the egg noodles following pack instructions; drain, toss with 1 teaspoon of sesame oil and the finely sliced spring onions and keep warm in the covered pan.
  2. Remove the Quorn pieces to a plate. Reduce the heat under the wok to medium and add the plums and the sugar to the pan. Cook for 2-3 minutes until the plums start to caramelise.
  3. Add the ginger, mangetout, baby corn and cashews to the wok and stir-fry for 3 minutes. Return the Quorn pieces to the wok, along with the spring onion chunks, plum sauce, soy sauce and 2 tablespoons of water. Stir-fry for 2 minutes, ensuring that everything is coated with the sauce.
  4. Divide the noodles between bowls and top with the sticky plum Quorn and veg.
