Ingredients

  • 1½ tbsp olive oil
  • 65g lean smoked bacon lardons
  • 1 garlic clove, finely sliced
  • 4 spring onions, sliced
  • 200g frozen peas
  • 3 tbsp half-fat crème fraîche
  • 1 x 300g pack spinach gnocchi
  • handful of fresh mint, chopped
  • Parmesan, grated, optional

Step by step

  1. Heat ½ tablespoon of the oil in a shallow frying pan and fry the bacon for 4-5 minutes, or until golden.Add the garlic and spring onions and cook for 1 minute, then add the frozen peas. Cook for 2-3 minutes, or until the peas are warmed through. Add the crème fraîche with a splash of water, season well and keep warm.
  2. Heat the remaining oil in a large frying pan over a medium heat. Sauté the gnocchi for 3-4 minutes on each side, until crisp and golden. Toss through the pea sauce with the mint. Serve in bowls, topped with some Parmesan cheese if you want.
