A classic tomato-based pizza (which can be used as a blueprint for your choice of toppings), but with a modern flavour twist. Sweet and spicy honey contrasts beautifully with the tangy feta and chorizo

Ingredients

  • 1 quantity of pizza dough
  • 60g grated mozzarella
  • a handful of basil leaves, plus extra to garnish
  • 10 slices chorizo
  • 75g roasted peppers from a jar, torn
  • 75g feta, crumbled
  • 1 tbsp clear honey
  • a pinch of chilli flakes
For the sauce (makes enough for 4 pizzas)
  • 1 x 400g tin chopped tomatoes
  • 2 garlic cloves, crushed
  • 1 tbsp olive oil, plus extra to drizzle
  • 1 tsp sugar
  • 1 tbsp torn basil

Step by step

Kitchen tip
To make pizzas for the freezer, double up on the dough quantities to make four bases. Before you cook the pizzas that you’ll be eating for dinner, top two bases just with tomato sauce and cook for about half the given recipe time below until the crust is set and pale gold. Cool, wrap well and freeze for up to 2 months. When ready to serve, preheat the oven to 200°C, fan 180°C, gas 6. Scatter your toppings and cheese onto the frozen pizza bases and bake for 8-10 minutes, directly on the oven shelves.
  1. Make the pizza dough at least 1 hour before you plan to cook the pizzas.

  2. Meanwhile, gently simmer all the tomato sauce ingredients together, uncovered, for 15 minutes or until slightly reduced. Set aside.
  3. Depending on your chosen cooking method (see instructions above), preheat the oven to 240°C, fan 220°C, gas 9 with two baking trays or pizza stones in to get hot, or if using the hob/grill cooking method, preheat the grill to high.
  4. Shape the dough into two bases, spread each with a quarter of the tomato sauce and scatter with the mozzarella, basil, chorizo, peppers and most of the feta, then drizzle with a little oil. Cook according to your chosen method.
  5. Meanwhile, gently heat the honey with the chilli flakes and a pinch of salt. Drizzle this over the pizzas and scatter with the rest of the feta and extra basil leaves. Slice into wedges to serve.
