Ingredients

  • 4 Maris Piper potatoes (about 800g), skin on
  • 3 tbsp olive oil
  • ½ tsp dried mixed herbs
  • 500g 20% beef mince
  • 1 tsp fine salt
  • sliced crinkle cut gherkins, to serve
For the cheese sauce
  • 200g grated cheddar and mozzarella mix
  • 1 tbsp cornflour
  • 1 tbsp cornflour
For the burger sauce
  • 120g mayonnaise
  • 50g tomato ketchup
  • 20g American mustard
  • 3 slices crinkle cut gherkins, very finely chopped
  • ½ tsp chopped fresh dill
  • ¼ tsp paprika
  • a few shakes of Tabasco

Step by step

  1. Cut the potatoes into 1cm sticks. Put into a bowl, rinse well under cold running water, then cover with cold water and let soak for 30 minutes.
  2. Preheat the oven to 200°C, fan 180°C, gas 6. Drain the potatoes well and pat dry. Spread out on a large baking tray and toss with 2 tablespoons of oil, the mixed herbs and a large pinch of salt. Bake for 20 minutes, then toss the fries and bake for a further 5-10 minutes until crisp and golden.
  3. Meanwhile, heat the remaining oil in a large frying pan. Add the beef, sprinkle with the salt and break the mince up into small pieces, spreading out to create a single layer. Cook, undisturbed, until the underside is browned and crisp (about 4-5 minutes). Turn the pieces over and cook until the other side is browned and the meat is crispy and cooked through (about 3-4 minutes).
  4. For the cheese sauce, combine the cheese and cornflour in a large saucepan and add 200ml of milk. Whisk constantly over a low heat for about 5 minutes, until it forms a thick sauce with a pouring consistency. Add the extra milk if the sauce is too thick.
  5. Tip the fries into a large baking dish, drizzle over two-thirds of the cheese sauce and scatter over the beef. Top with the remaining cheese sauce, then bake for 5 minutes.
  6. Meanwhile, combine the ingredients for the burger sauce, seasoning lightly. Drizzle the fries with some of the burger sauce and scatter over the sliced gherkins. Serve the remaining sauce on the side for dipping.
