Ingredients

  • 175g whole almonds
  • 175g pecans
  • 2 tbsp coconut oil, melted
  • 20g cacao powder
  • 3 tbsp maple syrup
For the chocolate filling
  • 200g dark chocolate (about 70% cocoa solids), chopped, plus shavings to serve, optional
  • 1 x 400ml tin coconut milk

Step by step

Keep in an airtight container in the fridge for up to 4 days, or freeze.
  1. In a food processor, blitz the almonds and pecans to a fine crumb. Add the melted coconut oil, cacao powder and maple syrup to the food processor, and blitz again until a sticky dough forms.
  2. Tip the mixture into a 23cm diameter tart tin and use your hands to press it firmly and evenly up the sides and over the base. Chill until firm.
  3. For the filling, melt the chocolate in a heatproof bowl over a saucepan of gently simmering water. Cool slightly then place in a food processor.
  4. Scoop out the thick cream only from the tin of coconut milk and add to the food processor (the rest can be frozen). Blitz until smooth and combined.
  5. Pour into the nutty tart case and smooth the top. Chill for 2-3 hours.
  6. Remove from the fridge 30 minutes before serving and top with chocolate shavings if using.

     
    Tip
    *Use dairy-free chocolate if required.
