Flaky, buttery croissants made even better with roasted ham, melted cheese and golden, crispy fried eggs

Ingredients
- 2 Sainsbury’s All-Butter Croissants
- 1 tsp dijon mustard
- 100g emmental cheese, grated
- 2 large slices honey roast ham
- 4 tbsp Sainsbury’s Cheese Sauce
- 2 tbsp vegetable oil
- 2 Happy Egg Co. Large Free Range Eggs
- ¼ x 20g pack bunched chives, snipped

Preheat the oven to 200°C, fan 180°C, gas 6. Slice each croissant in half lengthways, not quite cutting all the way through. Spread the insides with mustard, then fill each with a quarter of the grated emmental and a slice of ham. Place on a baking tray and cook for 3-5 minutes until the cheese is melting.

Turn the oven’s grill to high. Top each croissant with the cheese sauce and the remaining grated cheese, then cook beneath the grill until bubbling – around 2 minutes.

Meanwhile, add the oil to a frying pan over a high heat. When hot, crack in the eggs. Spoon the hot oil over the egg whites as they cook. Once crispy at the edges, remove from the heat. Top each cheesy croissant with a fried egg, some black pepper and the chives to serve.
