Ingredients
- 150g cottage cheese
- 100g porridge oats*
- 2 medium eggs
- 2 tsp baking powder
- 1-2 tsp maple syrup, plus extra to serve (optional)
- 1 tbsp olive oil
- fresh fruit, to serve
Step by step

In a blender, briefly blitz the cottage cheese, oats, eggs and baking powder until smooth and thick. You can also add 1-2 teaspoons of maple syrup if you want the pancakes to be a little sweeter.

Brush a large, nonstick frying pan with a little of the oil and place over a medium heat until hot. Working in batches, add 4 spoonfuls of the batter to the pan, spacing them well apart. Cook until set around the edges and deep golden-brown underneath, about 2 minutes. Gently flip the pancakes and cook until the other side is golden-brown, around 1-2 minutes more. Transfer to a plate. Repeat with the remaining batter until it is used up.

*Check your oats are gluten-free, if required.
