Ingredients

  • 150g white sugar
  • 10 cherries with stalks
  • 150ml cherry syrup from 1 x 425g tin black cherries
  • 300ml Amaretto
  • 1ltr soda water, to serve

Step by step

Get ahead
Make the toffee cherries up to 1 hour ahead.
  1. Heat the sugar with 4 tablespoons water in a heavy-based saucepan. When it's dissolved, increase the heat and bubble until golden, then remove from the heat. Dip the cherries into the caramel and leave to cool on baking paper.
  2. Mix the syrup and Amaretto together in a jug. Half-fill 10 glasses with ice and divide the cocktail between them. Top up each glass with 50ml soda water and garnish with a toffee cherry.
