Ingredients

  • 12 mint leaves
  • 3 tsp sugar
  • 2 limes
  • 4 tbsp rum
  • 50-75ml soda water
  • a sprig of mint leaves

Step by step

  1. Put the mint leaves and sugar into a jam jar. Cut one lime into four wedges, and juice the second lime. Add two of the lime wedges and squash them, in the jar, with the end of a spoon for a good minute or so to muddle the ingredients together and release the flavours. Pour in the lime juice and rum. Put the lid on and give it a good shake. Pour over ice into a glass and top up with soda water. Repeat as necessary and garnish each mojito with a couple of lime wedges and a mint sprig.
