Ingredients
- 100g mild soft goat’s cheese
- grated zest of ½ lemon
- pinch of chilli flakes
- 10 California medjool dates
- 10 small, soft sprigs of lemon thyme (or regular thyme)
- 5 rashers smoked streaky bacon, halved
Step by step
- Preheat the oven to 200°C, fan 180°C, gas 6. Line a large baking tray with baking paper.
- Put the goat’s cheese, lemon zest, chilli flakes and a good grind of salt and pepper in a bowl and beat together.
- Split open the dates, taking care not to cut through them completely, and remove the stones. Stuff each with a spoonful of the goat’s cheese mixture and top each stuffed date with a sprig of thyme.
- Stretch out the halved bacon rashers a little, then wrap them around the stuffed dates so the ends meet at the non-cut side of the date.
- Arrange the wrapped dates, seam-side down, on the lined baking tray and roast for 20 minutes until the bacon is golden and turning a little crisp. Allow to cool slightly before serving.
