Florida grapefruit sliced fennel salad
Fennel's strong and aromatic presence is perfectly balanced by a bite of sweet and juicy Florida Grapefruit. Serve as a refreshing starter or light main course.
1 Florida Grapefruit, segmented
3 bulbs of fennel
Few sprigs of fresh mint
2 handfuls of rocket
1tbsp Sherry vinegar
2 tbsp Extra virgin olive oil
1oz flaked almonds
Step 1: Segment the Florida Grapefruit and arrange segments on a platter or in a bowl.
Step 2: Toast the flaked almonds in a dry frying pan.
Step 3: Shave the fennel using a speed peeler, then place in a bowl of ice water.
Step 4: Drain the fennel, spin to dry, then mix with the mint, rocket and a splash of sherry vinegar and olive oil.
Step 5: Season with salt and black pepper.
Step 6: Scatter the fennel mixture over the grapefruit and top with toasted almonds.
